Jack Barbeque
Sometimes you just want to make yourself a sandwich, wrap it up, and put it in your bag for later... This recipe is for those occasions! All you need to do is prepare the ingredients the day before, and you'll have your lunch sorted for a couple of good days at work. Not just any lunch - sweet BBQ Jackfruit accompanied by cream cheese, spicy pumpkin, apples, and toasted seeds will awaken all your senses. I guarantee you'll want more 🙂

| slices of roasted pumpkin | 6 slices / 100g |
| gala aple | 1/4 piece |
| cream cheese for sandwiches | 6 teapoons |
| roasted sunflower seeds | 2 tablespoons |
| arugula | 1 hanfful |
| optional: | additional BBQ sauce |

Bake the pumpkin with chili, cinnamon, and vegetable oil.
Slice the apples into thick slices. Sauté in a pan with heated vegetable oil. Towards the end, add a small amount of maple syrup and cook until caramelized.
If you don't have access to plant-based cream cheese, blend soaked cashews or sunflower seeds with a small amount of water or plant-based cream. Season with salt, pepper, and lemon juice.
Heat up the Jack BBQ.
Toast the baguette in the oven or toaster. Fill it with the prepared ingredients.
Enjoy immediately or take it with you to school/work :)
