Korean Bowl with Shredded Jackfruit

With Naked Jack, you can do whatever you want! In today's bowl, preparing it is ridiculously easy, and the taste resembles chicken :) In Korea, a bowl with rice, vegetables, and a topping is called "Bibimbap," always accompanied by a spicy sauce made from fermented chili paste - Gochujang! This is a perfect option for lunch, dinner, or even supper - your choice! Serve it cold or hot - it tastes equally delicious in both ways.

Ingredients

Jackfruit and Ingredients for 2 bowls:

  • Naked Jackfruit: 300g
  • Vegetable oil: 2 tablespoons (30ml)
  • Vegetable broth cube: 1 cube
  • Grated carrot: 1 piece
  • Sautéed mushrooms: 100g
  • Cooked broccoli: 1 piece
  • Radish; sliced: 10 pieces
  • Cooked sushi rice: 300g
  • For serving: lime, sprouts, sesame seeds

Gochujang Sauce:

  • Gochujang paste: 1 teaspoon
  • Garlic clove: 1/2 clove
  • Peeled ginger: 2cm piece
  • Lime; zest removed: 1/4 piece
  • Water: 50ml
  • Soy sauce: 30ml

How to prepare

  1. Cook and season the sushi rice according to the instructions on the package.

  2. Measure all the ingredients.

  3. Mix the vegetable broth cube with 100ml of boiling water. Transfer the Jackfruit to a skillet and pour the broth over it. Cook until the broth evaporates.

  4. Once the broth has evaporated, add the vegetable oil (or other fat). Sauté until the Jackfruit browns.

  5. Prepare the vegetables. Grate the carrot, blanch the broccoli, slice the radishes, and sauté the mushrooms. You can use other vegetables that you have in your fridge.

  6. Blend the ingredients for the sauce until smooth. You can strain it if there are large ginger fibers left.

  7. Assemble the bowl to your liking, drizzle with the sauce, and enjoy it cold or warm :)

*Store the Jackfruit in the refrigerator for up to 5 days. It can also be frozen!
