Jamaican Jackfruit Curry

Usually, curry is associated with Thai or Indian cuisine, but this dish is cooked in many different ways around the world. See how to make Jamaican Jackfruit Curry with Naked Jackfruit chunks! It's a very aromatic soup with the addition of plantains, which are also called vegetable bananas.

Ingredients

Curry for 2 servings:
Jack Naked in Chunks   400g
garlic cloves 3 piece
white onion 150g
red bell pepper 1 piece
turmeric powder 1 teaspoon
curry powder 2 teaspoons
ground chili 1/2 teaspoon or more
ground coriander 1 teaspoon
ground pepper a pinch
coconut milk 2 cans / ok. 500g
ripe platain 1 piece
unrefined coconut oil 2 tablespoons
black rice / basmati any amount / about 100g per serving

How to prepare

  1. Open the jackfruit and rinse it under running water. You can soak it in clean water for a while to remove the taste of the brine.
  2. Dice the onion and bell pepper finely.
  3. Sauté the onion in a pot with melted coconut oil. Caramelize it, then add the bell pepper and garlic. Sauté.
  4. Add all the dry spices and cook over low heat until the spices become fragrant.
  5. Add the jackfruit and sauté for half a minute, stirring. Pour in the coconut milk, mix well.
  6. Cook for about 20 minutes over low heat until the jackfruit softens and absorbs the spices.
  7. Slice the plantain into strips. Heat coconut oil in a pan. Add the plantain and fry on each side until golden brown. Remove from the pan.
  8. Meanwhile, cook the rice until fluffy.
  9. Serve the curry with rice, plantain, and fresh thyme for aroma.
