"Gochujang Jack" from Korea

Super easy jackfruit cooked in a spicy sauce inspired by Korea. Spicy, garlicky, hearty, and just delicious!

Ingredients

For gochujang:
Jack Naked Pulled 250g
gochujang paste 1/4 cup (60 ml)
soy sauce 2 tablespoons (30 ml)
coconut sugar 2 tablespoons
shallot; chopped 1 piece
garlic cloves; chopped 2 pieces
ginger; ground 1-inch piece
oil 1 tablespoons (15 ml)
green onion; chopped 2 tablespoons
water 1/4 cup (60 ml)

 

For serving:
rice
avocado
cilantro
lime juice

How to prepare

  1. Open the packet of Pulled Jackfruit.
  2. In a small bowl, mix together the gochujang paste, soy sauce, coconut sugar, minced shallot, garlic and ginger. Pour over the Jackfruit and mix well.
  3. Heat a tablespoon of oil in a large non-stick skillet over medium heat. Once hot, sauté the chopped green onions for about 2 minutes. Then add the jackfruit with the sauce and 1/4 cup of water.
  4. Simmer uncovered over medium heat for 7-10 minutes. Serve over rice, topped with toasted peanuts, cilantro and a squeeze of lime!
  5. Jackfruit Gochujang can be stored in the refrigerator for up to 2 days. Gently reheat in a skillet over medium heat.
