A'la Tuna Onigirazu

Our Fisherman series begs to be used in Asian cuisine! Well, maybe except for the paprika paste... :D Onigirazu is a "sushi sandwich," where you can put whatever you like! The important part is that it includes rice and is wrapped in nori seaweed. I've created two Jackfruit variations - Onigirazu with Sriracha A'la Tuna, mayo, pickled cabbage, cucumbers, and lettuce, and another with Chili & Citrus Tuna, chili, mango, also with mayo and lettuce, oh my!

Ingredients

Ingredients for Onigirazu:

  • A'la Tuna in oil; drained: 1 can
  • Sushi rice: 500g
  • Sushi vinegar: 100ml
  • Chili & Citrus A'la Tuna: 1 can
  • Pickled red cabbage: 3-4 tablespoons, drained
  • Pickled cucumbers (or fresh): 1 piece
  • Mango; slices: 1/4
  • Sweet chili; chopped: 1/2
  • Nori seaweed: 6 sheets
  • Curly lettuce; washed and dried: 6 leaves
  • Roasted sesame seeds: 1 tablespoon
  • Mayonnaise: 2 tablespoons
  • Sriracha sauce: 1-2 teaspoons, depending on desired level of spiciness.

    Additionally:

  • Burger buns: 2
  • Vegan mayonnaise: 2 tablespoons
  • Fresh cilantro: a few leaves
  • Avocado: 1/2 piece
  • Mango: 1/4 piece
  • Red onion: 2 slices
  • Curly or iceberg lettuce: 2 leaves
  • Tomato: 2 slices

How to prepare

  1. Rinse the rice and cook it according to the instructions on the package. Also, prepare the sushi seasoning by mixing 4 tablespoons of rice vinegar, 4 tablespoons of sugar, and 2 teaspoons of salt.
  2. Prepare all the ingredients. Open the cans of A'la Tuna and transfer them to two separate bowls. Drain excess oil from the "in oil" version and add sriracha, mix well. Transfer the citrus version to the second bowl.
  3. Drain the pickled vegetables, wash and dry the lettuce. Slice the mango into thin slices.
  4. When the rice cools down to room temperature, start assembling the onigirazu. Place a sheet of nori on a clean surface or cutting board with the shiny side facing down. Place 1-1.5 tablespoons of rice and shape it into a square.
  5. On top of the rice, place lettuce, A'la Tuna, and your chosen vegetables. Cover with another thin layer of rice. Fold the opposite corners of the nori inwards, then the other two corners, to tightly wrap the sandwich.
  6. Flip it over to seal the edges well, then wrap it in plastic wrap or cut it in half and enjoy!
  7. You can store the wrapped Onigirazu in the fridge for later or take it with you, but be aware that the nori might become a bit soggy.
